As you go about your diet plan, if there’s one type of food that you want to make sure you are eating sufficient volumes of, vegetables would be it. Rich in nutrition, low in calories, high in fiber, these are a can’t-miss food for anyone who wants to either lose weight or just maintain a better overall level of health.
That said, it’s easy to find yourself gravitating to the same three or four choices day after day after day. It’s time to shake that up. Not only will adding more vegetable varieties into your day boost your nutrition, it’ll keep you most interested in eating them as well.
Here are three great vegetables to consider that you might be currently overlooking.
Squash
Squash, whether you choose to use spaghetti squash or butternut squash makes for a great substitute for potatoes or pasta and is a lower carbohydrate and calorie option. It’s not quite as low in calories as some other leafy vegetables, but this is a good thing because you can use these when dieting to provide the energy you need, but still feeling satisfied on the larger serving size.
Cucumbers
Next, don’t forget about cucumbers. This one is very low in calories and won’t give you that much in the way of energy, they do contain some nutrients and will certainly help with your hydration needs.
Cucumbers are great eaten raw on their own, added to salads, or even added into cooked dishes if you really prefer. However if you are going to use them in cooking, you’re often better off choosing zucchini’s instead.
Bean Sprouts
Bean sprouts are another vegetable that far too often gets overlooked but are a great addition to any diet. Low in calories, these work well in pita’s, sandwiches, or tossed into salads or topped over stir fries.
Egg Plant
Finally, don’t forget about eggplant. This vegetable taste great grilled but can also be used a number of different ways such as to make a healthier lasagne dish as well.
Eggplant is high in fiber and still lower in carbs than potatoes or pasta, so works great as a lower carb option for your diet plan.
So there you have a few vegetables to start considering getting into your diet plan. If you aren’t eating these now, take a walk through the grocery store and pick them up – along with any other vegetable you see that you haven’t had in a while.
